Thank Eileen for the 10 Egg White Omelet at Georgie V's

In Patch's weekly column looking at unusual foods around the North Shore, we take a bite out of a giant omelet at Northbrook's breakfast restaurant, Georgie V's, named after a regular patron.

Eileen's omelet at Georgie V's was named after a regular customer who first requested it about 10 ago. Made with 10 egg whites, it's big enough for three people.

According to the restaurant's owner, the svelte woman from Highland Park calls ahead to order the omelet five or six times a week, arrives at the restaurant, sits down at the same table and consumes the entire thing. She has even been known to order two.

Despite it's size, the dish is rather light and fluffy. Filled with your choice of three vegetables, it also comes with your choice of hash browns, sliced tomatoes or fruit. Customers also get to choose a side of pancakes or bread (white, wheat, rye, English muffin, bagel or whole wheat pita) — standard options for omelet orders at the breakfast restaurant.

Just in case Eileen’s omelet isn’t big enough for you, Georgie’s Monster Omelet, made with 12 egg whites, is also on the menu. It comes standard with mushrooms, tomatoes, onions, spinach, broccoli, pea pods and artichokes, along with the usual side choices.

Georgie's omelet used to carry a customer's name as well, but the original namesake stopped visiting the restaurant so the owner put his own name on it instead.
