WHEELING – Bolstered by 30 years in the design, construction, and marketing of trend setting restaurants, Joe Romeo has utilized his experience and expertise to open May 13 his newest unique creation, Spears Bourbon-Burgers-Beer www.spearschicago.com, a natural, gourmet burger eatery with a sophisticated bourbon and craft beer specialty bar, 723 N. Milwaukee Ave.

Fans of his two most recent creations - Beer Market in Vernon Hills and Beer House in Lombard - will immediately recognize the high quality drink and food offerings and fun atmosphere at Spears Bourbon-Burgers-Beer, which serves specially selected bourbons, a variety of all-

American natural gourmet burgers, and an eclectic craft beer collection, including craft beer produced, served, and made popular at other Chicago area restaurants and brewpubs.

A warm, open space greets and welcomes customers.  Fire pits warm the outdoor patio while refurbished barn wood and strategically-placed vintage pictures of bourbon, burgers, and beer recreate their journey.   There is a full, custom-made bar, comfortable dining, and inviting atmosphere, including a vintage community table for those who are seeking a more socially-spirited experience.

Spears Bourbon-Burgers-Beer will be open every day from 11:00 a.m. to 2:00 a.m., said Romeo, who has opened 11 bars and owned four different restaurant and bar concepts.

“We are entering a new age for bourbon and beer drinkers,” said Romeo.  “Our bourbon flights and craft beer flights enable our customers to learn what the hype is about.  Our cocktails are prepared by knowledgeable bartenders who know the process of making, mixing, and drinking high quality beverages.  They know how to pair drinks with our all-American natural gourmet burger.”

Romeo’s idea to focus on bourbon, a concept unrivaled in the Chicago area, was sparked by and is in the tradition of the drink, which is a strong cultural element of America’s rich history, and often if referred to as “America’s own spirit.”  Romeo even named the restaurant after Jacob

Spears, who is credited as the first distiller to actually label his product “Bourbon,” after Bourbon County, Kentucky.

“There are no nearby restaurants and bars that specialize in offering a combination of these three ingredients beloved by so many Americans,” he said.  “There are burger restaurants, all-beer bars, and bourbon specialty bars, but there are no bars like ours.  We house the best of these three worlds together and allow them to naturally complement one another.  We also have created menu items that pair with our specialty craft beers as well as our bourbons,” said Romeo.

Romeo said his target customer ranges from families looking to eat out, to those looking for great local music and sports entertainment, to craft beer and bourbon connoisseurs.  Spears Bourbon-Burgers-Beer offers the suburban family a taste of the city they can’t find in the ‘burbs with high end ingredients put together thoughtfully by a skilled kitchen team.  They even offer American homemade apple pie.  It is the place to find craft beers and bourbons, live music, good food, and courteous service all in a family friendly atmosphere, he said.
