Fourth of July Leftover Recipes

Who says the fifth of July can't be delicious too?

Not sure what to do with all the extra hamburgers and potato salad? Patch has some recipes to make the most of your 4th of July leftovers.

Turn your hamburgers into stuffed pepper.
Sabah Karimi's recipe for Yahoo suggests to cut up and crumble the hamburger meat, season to taste, stuff a pepper or tomato and bake until golden brown.

Turn your potato salad into latkes.
This recipe comes from Mainstreet.com. If you have potato salad that was properly refrigerated, it should last more than a day or two. Add a bit of tuna and a binding agent, such as corn starch, form the potato salad into a a little cake and fry.

Turn your extra buns into pineapple upside-down cakes.
Real Simple's recipe takes about 45 minutes to prepare and can serve four.
The recipe calls for:

  • 4 tablespoons unsalted butter
  • 2/3 cup light brown sugar
  • 4 pineapple slices (fresh or canned), 1/4 inch thick
  • 2 hamburger buns, split
  1. Heat oven to 350° F.
  2. In a large ovenproof skillet, over medium heat, melt the butter. Add the sugar and cook, stirring constantly, for 1 minute for caramel sauce. Remove from heat. 
  3. Arrange the pineapple slices in a single layer in the skillet. Top each slice with a bun half, cut-side down. Transfer to oven and bake for 30 minutes. Let cool for 5 minutes.
  4. With a spatula, invert each cake onto an individual plate and spoon any remaining caramel sauce over the top. Serve with the ice cream (if available).
